These fabulous, intensely flavoured Mediterranean sun dried tomatoes have their flavour concentrated to the full by drying slowly in the sun. Delicious added to pasta, risottos, quiches and salads or used in Italian antipasto, sauces and stuffing for chicken, turkey or lamb. To use in antipasto, re-hydrate and cover with extra virgin olive oil, chopped parsley, garlic, capers and chillies (if you like it hot!) Leave to marinate at least 20 minutes.

Sun dried tomatoes have the same
nutritional value as the fresh tomatoes
they are made from: they are high in
Lycopene, antioxidants, vitamin C and
low in sodium, fat, and calories.
They are also an excellent source of
vitamin A, and vitamin K. They are also
a very good source of molybdenum,
potassium, manganese, dietary fibre,
chromium, and vitamin B1.
In addition, tomatoes are a good source
of vitamin B6, folate, copper, niacin,
vitamin B2, magnesium, iron,
pantothenic acid, phosphorous,
vitamin E and protein.
